As a type 1 diabetic, I've been 3 months off of insulin and almost 9 months of going grain-free, dairy-free, and legume-free (paleo). Blood sugars have all been good. I just started my senior year of college!
I found a bread recipe on the blog The SCD girl and her kid. It's a grain free, dairy free, paleo and low carb recipe. I turned it more into a cake by adding some stevia and coconut oil frosting (not pictured).
